Molasses and Mint biscuits

Postby gregandali on May 7th, 2010, 1:02 pm

4 CUPS WHOLEMEAL FLOUR
3/4 CUP MINT CHOPPED
4 TABLESPOONS OIL
4 TABLESPOONS BLACKSTRAP MOLASSES (bought in health food shop_)
1/2 cup water

blend all together and knead for a minute. Turn dough out onto floured board and roll to whatever thickness you prefer (mine was 5mm?)
recipe said to bake at 180 for 40 minutes., this gives you a nice biscuit however if you want them harder so they last better, then i baked at 120 for 2 hours or so, touch the biscuits in the centre and if they are still soft cook a little longer.

the dogs LOVE them! they have a good crunch to them and are pretty good healthwise

PEANUT BUTTER COOKIES
280 GRAMS WHOLEMEAL FLOUR
1 TEASPOON BAKING POWDER
315GRAM UNSALTED NATURAL PEANUT BUTTER, (i bought organice from woolworths)
1 CUP MILK
mix dry and wet ingredients and then combine together to form a dough. Roll out to preferred thickness and cook at 190 for 20 minutes. I again cooked at 120 for roughly 2 hours to get a hard crunchy biscuit.

no they didn't burn. Depending on your oven and the heat, i have fan forced, the lower the temp the longer you can cook them as it is basically dehyrdating the biscuits so they go nice and hard.
you could cook them for the recipe time which i think was 180 for 40 mins and then turn down to low and cook until they aren't soft when you poke them.
i have borrowed my mums dehydrator and am currently trying the sweet potatoe chews, says to cook for up to 16 hours LOL so i am hoping they will end up a nice crunchy and healthy treat for the dogs, also cheap to make.
if they're any good i shall make some next time you come up for PJ and Nuki
